We talk a lot about plantains around here but not so much about yuca (cassava). And that’s just not fair because our cassava strips are just as popular as our plantain strips and we love cooking with cassava as well. As we wrote in an earlier post, yuca is a nutritious root vegetable free of nightshades. It’s versatile and can be used in many recipes as a substitute for potatoes. Cassava flour is also wonderful to make baked goods, from bread to cookies. Here are five recipes we think you’ll love.

One of the greatest things about having a food business is seeing people — from kids to food bloggers — enjoying our snacks. What’s even more exciting is seeing how people eat our snacks in unique ways. We shared some of our personal favorites in our last post, but this week we wanted to share this wonderful recipe that Jessi over at Jessi’s Kitchen created with Artisan Tropic plantain strips.
Jessi took nachos and just substituted the corn chips with plantain strips. When we saw it, it got us thinking: why didn’t we think of that?
